A creamy tomato sausage spinach penne pasta dish with rich flavors, perfect for a quick weeknight dinner.

Ingredients

  • 12 oz penne pasta
  • 1 lb Italian sausage (mild or spicy)
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup marinara or tomato sauce
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage in chunks and cook until browned.
  2. Cook penne in salted water until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  3. In the same skillet, sauté garlic until fragrant. Stir in marinara sauce and heavy cream, mixing until smooth. Add spinach and let it wilt.
  4. Add cooked penne and sausage back into the skillet. Toss to coat. Sprinkle mozzarella and Parmesan over the top, cover, and let it melt.
  5. Sprinkle red pepper flakes and extra Parmesan on top before serving.

Notes

  • Use mild or spicy Italian sausage based on preference.
  • Reserve pasta water to adjust sauce consistency.
  • Add extra cheese for a richer flavor.
