- 12 oz penne pasta
- 1 lb Italian sausage (mild or spicy)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup marinara or tomato sauce
- 1/2 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- Heat olive oil in a large skillet over medium heat. Add sausage in chunks and cook until browned.
- Cook penne in salted water until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- In the same skillet, sauté garlic until fragrant. Stir in marinara sauce and heavy cream, mixing until smooth. Add spinach and let it wilt.
- Add cooked penne and sausage back into the skillet. Toss to coat. Sprinkle mozzarella and Parmesan over the top, cover, and let it melt.
- Sprinkle red pepper flakes and extra Parmesan on top before serving.
Notes
- Use mild or spicy Italian sausage based on preference.
- Reserve pasta water to adjust sauce consistency.
- Add extra cheese for a richer flavor.
