Ingredients
Scale
3 large boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon onion powder
Salt and black pepper to taste
2 cups fresh spinach
3 garlic cloves, minced
1/2 cup cream cheese, softened
1/3 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1 tablespoon butter
2 tablespoons butter (for sauce)
3 garlic cloves, minced (for sauce)
1 cup heavy cream
1/2 cup chicken broth
1/3 cup parmesan cheese (for sauce)
1 teaspoon Italian seasoning (for sauce)
Salt and black pepper to taste (for sauce)
Fresh parsley, chopped (for garnish)
Extra parmesan cheese (for garnish)
Instructions
Slice a pocket into each chicken breast without cutting all the way through. Rub with olive oil and season generously with paprika, garlic powder, Italian seasoning, onion powder, salt, and black pepper.
In a skillet, melt butter and sauté garlic until fragrant. Add spinach and cook until wilted. Stir in cream cheese, parmesan, and mozzarella until creamy and combined.
Fill each chicken breast pocket with the creamy spinach mixture and secure with toothpicks if needed.
Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4–5 minutes per side until beautifully golden brown.
Reduce heat and add butter and garlic to the pan. Stir in heavy cream, chicken broth, parmesan cheese, and Italian seasoning. Simmer until smooth and rich.
Spoon sauce over the chicken and cook for another 10–15 minutes until the chicken is fully cooked and juicy inside.
Sprinkle with fresh parsley and extra parmesan before serving hot with plenty of creamy sauce.
