20 jumbo pasta shells
2 cups cooked chicken, shredded
2 cups fresh spinach, chopped
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1 cup heavy cream
2 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
Salt and black pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cook the jumbo shells according to package directions and drain.
In a bowl, combine chicken, spinach, ricotta, half the mozzarella, garlic, sun-dried tomatoes, Italian seasoning, salt, and pepper.
Stuff each shell with the chicken mixture.
Arrange the stuffed shells in a greased baking dish.
Pour the heavy cream around the shells.
Sprinkle with the remaining mozzarella and Parmesan cheese.
Bake for 25–30 minutes until golden brown and bubbly.
Let rest for 5 minutes before serving.
Garnish with fresh parsley and extra Parmesan if desired.
Notes
For added flavor, consider using rotisserie chicken.
Feel free to substitute the spinach with other greens like kale or Swiss chard.
This dish can be prepared ahead of time and baked just before serving.
