A delicious and comforting dish featuring creamy spinach, ground beef, and roasted eggplant layered together for a hearty meal.

Ingredients

  • 2 large eggplants, sliced into ¾-inch rounds
  • 2 tbsp olive oil
  • 3 tbsp butter, melted
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • ¾ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 tsp dried oregano
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
  3. Roast for 20–25 minutes, flipping halfway through, until the eggplant is tender.
  4. In a small bowl, combine the melted butter, garlic, Italian seasoning, onion powder, oregano, and half of the Parmesan cheese.
  5. Brush the garlic butter mixture generously over each roasted eggplant slice.
  6. Top with mozzarella and the remaining Parmesan cheese.
  7. Bake for 10–12 minutes until the cheese is melted and bubbling.
  8. Broil for 2–3 minutes until the top is deeply golden and lightly crispy.
  9. Sprinkle with fresh parsley, basil, and red pepper flakes if desired.
  10. Serve hot as a side dish or with grilled chicken, steak, or crusty garlic bread.

Notes

  • For a vegetarian version, omit the beef and add more vegetables.
  • Can be served as a main dish or a side.
  • Adjust seasoning and cheese to taste.
