A delicious and comforting recipe for creamy spinach beef eggplant stacks, perfect for a cozy meal.

Ingredients

  • 2 large eggplants, sliced into 1-inch rounds
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 lb lean ground beef
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp butter
  • 2 tbsp chopped fresh basil
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Brush both sides of the eggplant slices with olive oil, season with salt and pepper, and roast for 20–25 minutes until tender and lightly golden.
  2. Heat a skillet over medium heat and cook the ground beef until browned. Add the onion and cook until softened, then stir in the garlic, Italian seasoning, and smoked paprika.
  3. Add the chopped spinach and cook until wilted. Stir in the cream cheese until melted and creamy.
  4. Place one roasted eggplant slice on a baking dish. Spoon a generous layer of the creamy beef mixture on top and sprinkle with mozzarella.
  5. Add another eggplant slice on top to create a stack. Repeat with the remaining ingredients.
  6. Pour the heavy cream around the stacks and sprinkle the tops with the remaining mozzarella and Parmesan cheese.
  7. Bake for 12–15 minutes until the cheese is melted and bubbling.
  8. Broil for 2 minutes to create a beautifully golden crust.
  9. Garnish with chopped basil and fresh basil leaves. Serve hot with garlic bread or a crisp garden salad.

  • For a vegetarian option, substitute ground beef with lentils or a plant-based alternative.
  • Feel free to add more vegetables like bell peppers or zucchini in the layers.
