3 medium eggplants, halved lengthwise
2 tablespoons olive oil
Salt and black pepper to taste
400g shrimp, peeled and cleaned
2 garlic cloves, minced
1 tablespoon butter
1 teaspoon paprika
1/2 teaspoon chili flakes
1 tablespoon fresh parsley, chopped
1 teaspoon fresh dill, chopped
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1/2 cup cooking cream
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese
1 teaspoon garlic powder

Extra parmesan cheese (for garnish)
Instructions
Preheat oven to 400°F (200°C). Brush eggplant halves with olive oil and season with salt and black pepper. Place in a baking dish and roast for 25 minutes until tender.
Heat butter in a skillet over medium heat. Add garlic and cook until fragrant. Add shrimp, paprika, chili flakes, salt, and pepper. Cook for 2-3 minutes until shrimp turn pink and lightly golden. Mix in parsley and dill.
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk while whisking continuously. Add cooking cream, mozzarella, parmesan, garlic powder, salt, and pepper. Cook until smooth and creamy.
Lightly press the center of each roasted eggplant to create room for the filling. Fill with creamy sauce and top generously with cooked shrimp. Sprinkle with extra mozzarella and parmesan cheese. Bake for 15-20 minutes until bubbling and golden.
Finish with fresh parsley, dill, and extra parmesan before serving. Serve warm with rice, roasted vegetables, or fresh bread.
