- 1½ lbs large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 cups sweet corn kernels (fresh or frozen)
- 2 cups chicken or seafood broth
- 1 cup heavy cream
- 1 cup whole milk
- 2 tbsp all-purpose flour
- 1 tsp Old Bay seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
- 1 tbsp fresh lemon juice
- Sauté the vegetables in butter and olive oil until tender.
- Sprinkle flour over the vegetables and stir. Gradually whisk in broth, cream, and milk.
- Add corn and seasonings. Simmer for 10–12 minutes until slightly thickened.
- Add shrimp and cook for 3–4 minutes until pink and tender.
- Stir in lemon juice and parsley. Serve hot with crusty bread.
