  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried dill
  • Salt and black pepper, to taste

Instructions

  1. Dice the avocados and cucumber into bite-sized pieces, finely chop the red onion, and pat the shrimp dry.
  2. Whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, garlic, dill, salt, and pepper until smooth.
  3. Gently toss together the shrimp, avocado, cucumber, red onion, parsley, and chives. Fold in the dressing until evenly coated.
  4. Refrigerate the salad for 15–20 minutes to let the flavors blend while keeping the avocado fresh.
  5. Garnish with extra herbs and serve alone, over lettuce, or with bread or crackers.

Notes

  • Use Greek yogurt for a lighter dressing.
  • Serve chilled for best flavor.
  • Add lime juice to prevent avocado browning.
