A hearty comfort dish perfect for cozy nights in, this Creamy Sausage Orzo Soup combines Italian sausage, butternut squash, and fresh greens in a creamy broth.

Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), sliced or crumbled
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups butternut squash, peeled & cubed
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 6 cups chicken broth
  • ¾ cup dry orzo pasta
  • 2 cups fresh spinach or kale
  • ½ cup heavy cream
  • Salt & pepper, to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. In a large Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned and fully cooked.
  2. Stir in onion, garlic, and butternut squash. Cook for 5–6 minutes until onions are soft and squash starts to tenderize. Add Italian seasoning and red pepper flakes.
  3. Pour in chicken broth, bring to a boil, then reduce heat. Simmer for 10–12 minutes or until squash is fork-tender.
  4. Stir in the orzo and cook for another 8–10 minutes, stirring occasionally, until orzo is al dente. Toss in spinach (or kale) and let it wilt.
  5. Pour in the cream, season with salt and pepper, and let everything simmer for another 2 minutes. Serve hot with fresh thyme or parsley.

Notes

  • This soup can be made with either mild or spicy Italian sausage depending on your preference.
  • Feel free to substitute kale for spinach if desired.
  • For a lighter version, you can use half-and-half instead of heavy cream.
