CREAMY SALMON PASTA WITH ASPARAGUS

A rich and creamy pasta dish featuring tender grilled salmon and fresh asparagus.

  • 4 salmon fillets
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Fresh parsley (for garnish)
  • 8 oz spaghetti or linguine
  • Salt for boiling water
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 cup asparagus tips (blanched or sautéed)
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat the grill or a skillet over medium-high heat. Season salmon fillets with salt, pepper, garlic powder, and a squeeze of lemon juice.
  2. Grill or pan-sear salmon for 4–5 minutes per side until golden brown and cooked through. Set aside.
  3. Boil water with salt, and cook pasta according to package instructions. Drain and set aside.
  4. In a large pan, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  5. Pour in heavy cream and chicken broth. Simmer for 3–4 minutes until slightly thickened.
  6. Stir in Parmesan cheese, lemon zest, garlic powder, and a pinch of salt and pepper.
  7. Add the cooked pasta and sautéed asparagus to the sauce, tossing to coat evenly.
  8. Place grilled salmon fillets on top of the pasta. Garnish with fresh parsley and extra lemon slices if desired.

Notes

  • Make sure not to overcook the salmon to keep it tender.
  • Add a splash of white wine to the sauce for extra flavor.
  • Use a mix of fresh herbs for an aromatic twist.
