400g salmon fillet, skin removed and cut into cubes
Salt and freshly ground black pepper to taste
1 teaspoon paprika
1 tablespoon olive oil
1 tablespoon butter
300g penne pasta
3 garlic cloves, minced
1 small shallot, finely diced
1/2 cup chicken or vegetable broth
1 cup heavy cream
1/3 cup grated Parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon red pepper flakes (optional)
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
Lemon zest from 1/2 lemon
Instructions
Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
Season salmon cubes with salt, pepper, and paprika.
Heat olive oil and butter in a skillet over medium-high heat. Sear salmon 2–3 minutes per side until golden but still tender inside. Remove and set aside.
In the same pan, sauté shallot and garlic until fragrant and softened.
Pour in broth and simmer 2 minutes to deglaze the pan.
Reduce heat and stir in heavy cream, Parmesan, Dijon, and red pepper flakes. Simmer 3–4 minutes until slightly thickened.
Add cooked pasta and a splash of reserved pasta water if needed for a silky sauce. Stir in dill, parsley, and lemon zest.
Gently fold in salmon and simmer 1–2 minutes to warm through.
Taste and adjust seasoning. Garnish with fresh dill and cracked pepper before serving.
Notes
Do not overcook salmon to keep it tender.
Fresh dill makes a huge difference in flavor.
Save pasta water for a silky, restaurant-style sauce.
