Creamy Reuben Soup is a savory and tangy twist on the classic Reuben sandwich, offering a comforting and hearty meal in a bowl.

Ingredients

  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked corned beef, chopped
  • 1 ½ cups sauerkraut, drained
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 ½ cups diced potatoes (optional for extra heartiness)
  • 1 cup shredded Swiss cheese (plus extra for topping)
  • Salt & pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Melt butter in a large pot. Sauté onions and garlic until golden and fragrant.
  2. Add in chopped corned beef, sauerkraut, and potatoes.
  3. Pour in beef broth and stir in Dijon mustard. Bring to a simmer and cook until potatoes are tender.
  4. Reduce heat and add in heavy cream and Swiss cheese. Stir until the cheese melts.
  5. Season with salt and pepper to taste. Ladle into bowls, top with more Swiss cheese and parsley.

Notes

  • For a thicker soup, add more potatoes or reduce the amount of broth.
