Creamy Potato Corn Chowder is a hearty, comforting soup that combines the sweetness of corn with the richness of potatoes and cream.

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 3 potatoes, cubed
  • 1 cup corn
  • 3 cups vegetable broth
  • 1 cup cream or dairy-free cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook onion in olive oil. Add garlic and carrots, sauté for 2–3 minutes.
  2. Add potatoes, corn, broth, and thyme. Simmer for 20–25 minutes.
  3. Stir in cream. Mash some potatoes or blend a cup and return to the pot.
  4. Season to taste. Garnish with parsley and serve.
