1 sheet puff pastry, thawed
1 cup heavy cream
1/2 cup mascarpone cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/3 cup crushed pistachios
1 tablespoon honey (optional, for brushing)
Whipped cream and mint leaves (for topping)
Instructions
Preheat oven to 200°C (390°F).
Cut puff pastry into equal rectangles. Place on baking sheet lined with parchment paper. Cover with another parchment sheet and weigh down with a second baking tray.
Bake for 12–15 minutes or until golden and crisp. Let cool completely.
In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Add mascarpone and beat until smooth.
Pipe or spoon cream onto one pastry layer, add another layer and repeat until stacked.
Finish with whipped cream, chopped pistachios and a touch of honey if desired.
Chill before serving for cleaner slices and richer flavor.
