Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 16 oz mushrooms (cremini, white, or a mix), sliced
  • 1/2 tsp dried thyme (plus fresh thyme for garnish)
  • 1/4 tsp black pepper
  • Salt, to taste
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • Optional: splash of white wine (for depth of flavor)

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add the onions and garlic, cooking until fragrant.
  2. Toss in the sliced mushrooms and thyme. Sauté until golden and softened (about 10 mins). Add wine if using, and simmer till reduced.
  3. Sprinkle in the flour and stir to coat the mushrooms. Cook for 1–2 minutes to remove the raw flour taste.
  4. Gradually add vegetable broth while stirring. Bring to a simmer and let it cook for 10 minutes.
  5. Stir in the heavy cream, and if you prefer a smoother texture, blend part (or all) of the soup using an immersion blender. Garnish with fresh thyme.

Notes

  • For a vegan version, substitute heavy cream with coconut cream or a plant-based alternative.
  • Adjust the seasoning according to your taste.
  • This soup can be stored in the refrigerator for up to 3 days.
