Creamy Mushroom Orzo is a comforting and savory dish that combines orzo pasta with mushrooms, garlic, and cream for a creamy weeknight dinner.

Ingredients

  • 1 1/2 cups dry orzo pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 10 oz cremini or baby bella mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/2 onion, finely chopped
  • 1/2 cup dry white wine (or veggie broth)
  • 1 3/4 cups chicken or veggie broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: a pinch of thyme or Italian seasoning

Instructions

  1. In a large skillet, heat olive oil and butter over medium-high. Sauté mushrooms until golden brown and fragrant.
  2. Add onions and garlic, cooking until soft and aromatic. Pour in white wine to deglaze, scraping up all those delicious skillet bits.
  3. Stir in orzo and broth. Let it simmer, stirring occasionally until the orzo is tender and has soaked up all the liquid.
  4. Lower the heat and stir in heavy cream and Parmesan cheese until it’s velvety.
  5. Season with salt, pepper, and sprinkle fresh parsley on top. Serve hot and creamy straight from the skillet.
