300g rigatoni pasta
2 tablespoons olive oil
2 cups mushrooms, sliced (button or cremini)
1 small onion, finely chopped
2 garlic cloves, minced
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon dried thyme
1 cup asparagus, cut into 2-inch pieces
1 cup cooking cream
1/2 cup grated parmesan cheese
1/4 cup pasta water (reserved)
Chopped parsley, for garnish
Instructions
Cook rigatoni in salted boiling water according to package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain and set aside.
In a large pan, heat olive oil over medium heat. Add onion and cook until soft. Stir in garlic and mushrooms and sauté for 4–5 minutes until browned.
Add asparagus, salt, pepper, and thyme. Cook for 3–4 minutes until asparagus is just tender.
Pour in the cream and bring to a simmer. Stir in grated parmesan until smooth and creamy.
Add the drained pasta and a splash of the reserved pasta water. Toss everything together until the sauce clings to the pasta.
Serve hot, garnished with freshly chopped parsley and extra black pepper.

Use gluten-free pasta to make this dish gluten-free.
Swap cream for coconut cream for a dairy-free option.
Don’t overcook the asparagus—it should keep a nice bite.
