- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and freshly ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- Juice of 1 lemon
- Zest of 1 lemon
- 1/2 cup low-sodium chicken broth
- 1/2 cup cooking cream
- 1 tsp cornstarch (mixed with 1 tbsp water)
- 1 tbsp fresh parsley, chopped
- Pat chicken dry and season both sides with salt, pepper, garlic powder, and oregano.
- Heat olive oil in a skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add lemon juice, zest, and chicken broth. Let it simmer for 2 minutes.
- Stir in cream and cornstarch slurry. Cook for another 2–3 minutes until the sauce thickens.
- Return chicken to the skillet and coat with the sauce. Let it simmer for 2 more minutes.
- Serve hot, garnished with fresh parsley, alongside rice, steamed broccoli, and roasted potatoes.
