A juicy and zesty dish that combines chicken with a creamy lemon herb sauce, perfect for a comforting weeknight dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup cooking cream
  • 1 tsp cornstarch (mixed with 1 tbsp water)
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, garlic powder, and oregano.
  2. Heat olive oil in a skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add lemon juice, zest, and chicken broth. Let it simmer for 2 minutes.
  4. Stir in cream and cornstarch slurry. Cook for another 2–3 minutes until the sauce thickens.
  5. Return chicken to the skillet and coat with the sauce. Let it simmer for 2 more minutes.
  6. Serve hot, garnished with fresh parsley, alongside rice, steamed broccoli, and roasted potatoes.

  • For ultra-tender chicken, pound the breasts to even thickness.
  • Don’t skip the lemon zest – it elevates the sauce.
  • Add chili flakes for a mild spicy kick.
