1 package (about 20 oz) cheese tortellini (fresh or frozen)
1 tablespoon olive oil
1 lb ground beef sausage (use beef or chicken sausage, no pork)
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper (optional)
1 jar (24 oz) marinara sauce
1/2 cup heavy cream
1 1/2 cups shredded mozzarella cheese
Fresh parsley or basil, chopped, for garnish
Instructions
Cook tortellini according to package instructions, drain, and set aside.
In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and crumbled. Add garlic, oregano, and red pepper flakes. Sauté for 1–2 minutes.
Pour in marinara sauce and stir in heavy cream. Let simmer for 5–7 minutes until slightly thickened.
Add cooked tortellini to the skillet and toss to coat in the sauce.
Sprinkle mozzarella evenly on top, cover and let melt for 3–5 minutes.
Garnish with fresh herbs and serve hot.

Serve with garlic bread or crusty ciabatta.
