- 4 boneless, skinless chicken thighs (or breasts)
- Salt and black pepper to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili flakes (plus more for garnish)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 garlic cloves, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tablespoon chopped fresh parsley
- Pat chicken dry and season with salt, pepper, paprika, garlic powder, and chili flakes.
- Heat olive oil in a large skillet over medium-high. Sear chicken 5–6 minutes per side until deeply golden and cooked through. Remove and set aside.
- Lower heat to medium. Melt butter in the same pan and sauté garlic until fragrant (30 seconds).
- Pour in chicken broth and simmer 2 minutes, scraping up all the flavorful browned bits.
- Stir in cream and Parmesan. Let sauce gently simmer until slightly thickened.
- Add spinach and cook until wilted and silky.
- Return chicken to the pan, spoon sauce over the top, and simmer 2–3 minutes.
- Finish with parsley and extra chili flakes for that irresistible pop.

- Chicken thighs give extra juiciness and flavor
