300g spaghetti
2 tbsp olive oil
500g medium shrimp, peeled and deveined
Salt and pepper to taste
5 cloves garlic, minced
1/2 tsp chili flakes (optional)
1/2 cup sun-dried tomatoes, sliced
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated parmesan cheese
1/2 cup pasta water (reserved)
1 tsp lemon zest
Fresh basil or parsley for garnish
Instructions
Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup of the pasta water before draining.
In a large skillet, heat olive oil over medium heat. Season shrimp with salt and pepper, then sauté for 2–3 minutes per side until pink and cooked through. Remove and set aside.
In the same pan, add garlic and chili flakes. Cook for 1 minute until fragrant.
Add sun-dried tomatoes and cook for another 1–2 minutes. Pour in the heavy cream and stir well.
Add parmesan and stir until melted and sauce thickens. Stir in reserved pasta water gradually to reach desired consistency.
Add spinach and cook until just wilted. Return shrimp to the skillet along with cooked spaghetti. Toss everything together until well coated.
Finish with lemon zest, and garnish with fresh basil or parsley. Serve hot.
Notes
Don’t overcook shrimp; they cook quickly and should be tender, not rubbery.
Use high-quality parmesan for the best flavor.
Gluten-free pasta works beautifully for a gluten-free option.
