CREAMY GARLIC SEARED SCALLOPS

A delicious recipe for creamy garlic seared scallops that are golden-seared, buttery-tender, and bathed in a silky garlic cream sauce.

Ingredients

  • 1 lb large sea scallops (side muscle removed, very dry)
  • Salt and freshly cracked black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/2 cup seafood stock or chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon juice (or to taste)

Instructions

  1. Pat scallops completely dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high until very hot.
  3. Sear scallops 2–3 minutes per side without moving until a deep golden crust forms. Remove and set aside.
  4. Lower heat to medium. Melt butter in the same pan and sauté garlic for 30 seconds until fragrant.
  5. Pour in stock and simmer 2 minutes, scraping up all the browned bits.
  6. Stir in cream and Parmesan. Simmer gently until the sauce thickens and turns silky.
  7. Return scallops to the pan, spoon sauce over, and simmer 1–2 minutes (do not overcook).
  8. Finish with lemon juice and sprinkle with parsley.

Notes

  • Dry scallops = flawless golden crust
  • Don’t overcrowd the pan—sear in batches if needed
  • Swap cream for half-and-half for a lighter sauce
