¾ lb shrimp, peeled & deveined
¾ lb white fish fillets (like cod or haddock), cut into chunks
1 tbsp olive oil
Salt & pepper, to taste
1 carrot, thinly sliced (optional for sweetness & color)
1 tbsp butter
2 garlic cloves, minced
1 cup heavy cream
½ cup chicken broth (or seafood stock)
¾ cup shredded cheddar or Monterey Jack cheese
¼ cup Parmesan cheese
½ tsp paprika
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a skillet over medium-high heat. Season shrimp and fish with salt and pepper. Sear shrimp for 2 minutes per side, and fish for 3–4 minutes until lightly golden. Set aside.
In the same pan, melt butter. Add garlic and sliced carrots, cooking until fragrant and slightly soft.
Pour in cream and broth, bring to a gentle simmer. Stir in cheeses, paprika, and a pinch of pepper. Let it bubble until thickened and velvety.
Gently add back the cooked shrimp and fish into the sauce. Toss to coat and warm through for 2–3 minutes.
Ladle into bowls and top with fresh parsley. Serve with mashed potatoes, rice, or crusty bread for a cheesy dinner win that’ll leave everyone speechless.
