3 lb beef chuck roast or sirloin roast
2 tbsp olive oil
2 tbsp butter
4 garlic cloves, minced
1 cup beef broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp fresh rosemary, chopped
1 tsp fresh thyme leaves
1 tsp Dijon mustard
1/2 tsp onion powder
Salt and black pepper, to taste

Instructions
Preheat the oven to 325°F (165°C). Season the beef generously with salt, pepper, rosemary, thyme, and onion powder.
Heat the olive oil in a Dutch oven over medium-high heat and sear the roast on all sides until deeply browned.
Add the butter and garlic, cooking for 30 seconds until fragrant. Pour in the beef broth, cover, and roast for 2½–3 hours until the beef is fork-tender.
Transfer the beef to a serving platter and keep warm.
Place the Dutch oven over medium heat. Stir in the heavy cream, Dijon mustard, and Parmesan cheese, whisking until the sauce is smooth and slightly thickened.
Slice the roast and spoon the creamy garlic herb sauce generously over the top.
Garnish with fresh rosemary and a sprinkle of cracked black pepper.
Serve with mashed potatoes, roasted vegetables, buttered noodles, or crusty bread.
