Creamy garlic chicken stuffed eggplant boats are divine! These boats are loaded with tender chicken, rich garlic cream sauce, and a bubbling golden cheese topping, making them the ultimate comforting homemade dinner that everyone will crave.

  • 4 medium eggplants, halved lengthwise
  • 2 cups cooked chicken breast, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the eggplants in half lengthwise and score the flesh lightly. Brush with olive oil and place in a baking dish.
  2. Bake the eggplants for 25 minutes until tender and lightly golden.
  3. Meanwhile, heat olive oil in a skillet over medium heat. Sauté the onion until soft and translucent. Add the garlic and cook for another minute.
  4. Stir in the shredded chicken, Italian seasoning, paprika, salt, and black pepper.
  5. Add the cream cheese and heavy cream. Stir until the mixture becomes rich and creamy.
  6. Mix in half of the mozzarella cheese and half of the parmesan cheese until melted and smooth.
  7. Remove the eggplants from the oven and gently press down the centers to create space for the filling.
  8. Fill each eggplant boat generously with the creamy chicken mixture.
  9. Top with the remaining mozzarella and parmesan cheese.
  10. Bake for 15–20 minutes until the cheese is bubbling and beautifully golden brown.
  11. Finish with freshly chopped parsley and serve hot.
