2 cod fillets (about 6 oz each)
Salt & black pepper to taste
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup mushrooms, sliced (baby bella or white button)
1/2 cup heavy cream
1/4 cup chicken or veggie broth
1/4 cup grated parmesan cheese
1 tsp Dijon mustard
2 tbsp fresh chives, chopped
Cooked white rice (for serving)
Instructions
Season cod fillets generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear fillets until golden brown and flaky (about 3-4 minutes per side).
In the same skillet, melt butter and sauté mushrooms until softened and golden brown. Add garlic and cook for another minute until fragrant.
Lower the heat and stir in heavy cream, broth, Dijon mustard, and parmesan cheese. Simmer until thickened.
Nestle the cod back into the creamy sauce, spooning it over the top. Simmer for 2-3 minutes more.
Serve the creamy cod over warm rice, topped with chopped chives.
Notes
This dish pairs well with a side of steamed vegetables.
Feel free to substitute the cod with another white fish if desired.
For a lighter version, you can use half-and-half instead of heavy cream.
