  • 1 tbsp butter or olive oil
  • 1 lb boneless, skinless chicken breast, diced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced carrots (or Crac-style mixed veggies)
  • 1 cup sweet corn kernels
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp dried thyme
  • Salt & black pepper to taste
  • 1/2 cup croutons (for garnish)
  • Fresh chopped parsley (optional, for topping)

Instructions

  1. Heat butter in a large pot over medium heat. Add diced chicken and cook until golden and juicy.
  2. Add chopped onion and garlic, cooking until soft and fragrant.
  3. Toss in carrots and corn. Stir in thyme, salt, pepper, and pour in the broth. Bring to a boil, then simmer 15–20 minutes until veggies are tender.
  4. Stir in heavy cream and cook another 5 minutes.
  5. Ladle into bowls and top with crunchy croutons and parsley.
