Ingredients

  • 1 tbsp olive oil
  • 1 lb chorizo sausage, sliced into thick coins
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 1 tsp smoked paprika
  • 1/2 tsp crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Croutons & extra shredded cheese for topping

Instructions

  1. Heat olive oil in a large pot over medium-high. Add chorizo slices and cook until browned and crisp.
  2. Toss in chopped onion and garlic. Sauté until fragrant and golden.
  3. Stir in potatoes, smoked paprika, red pepper flakes, salt, and pepper.
  4. Pour in chicken broth, bring to a boil, then reduce to simmer. Cook until potatoes are fork-tender, about 15–20 minutes.
  5. Stir in heavy cream and cheddar cheese until melty and creamy. Taste and adjust seasoning. Serve hot with croutons, extra cheddar, and parsley.

Notes

  • For an extra kick, add more crushed red pepper flakes.
