Ingredients

  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup tomato puree
  • 1 tsp paprika
  • ½ tsp oregano
  • Salt & black pepper
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cups milk
  • Salt & white pepper
  • Pinch of nutmeg (optional)
  • 9 lasagna noodles (boiled or no-boil)
  • 2 cups mozzarella, grated
  • ½ cup cheddar
  • Fresh parsley

Instructions

  1. Sauté onion in oil, add garlic, chicken, and tomato puree. Season and simmer till thick.
  2. Melt butter, whisk in flour, then milk. Stir to make smooth béchamel. Season.
  3. In a dish, layer: béchamel, noodles, chicken, more béchamel, cheese. Repeat and top with cheese.
  4. Bake covered at 180°C for 25 mins, uncover and bake 15 mins more until golden.
