  • 1 cup heavy cream
  • 1 pound potato gnocchi
  • 1 1/2 cups fresh spinach
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup freshly grated Parmesan (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 4–5 minutes until softened.
  2. Stir in garlic and thyme. Cook for 30 seconds until fragrant.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add gnocchi and cook according to package instructions (about 3–4 minutes).
  5. Stir in shredded chicken and heavy cream. Simmer gently for 5 minutes.
  6. Add fresh spinach and cook until wilted.
  7. Season with salt and pepper. Stir in Parmesan if using.
  8. Ladle into bowls and sprinkle with fresh parsley before serving.
