Instructions

  1. Prepare the Filling: Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft and fragrant. Add shredded chicken, cream cheese, mozzarella, salt, and pepper. Mix until creamy and well combined. Remove from heat.
  2. Assemble Enchiladas: Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a baking dish. Sprinkle extra cheese over the top.
