Creamy Chicken and Rice is a quick and comforting dish featuring tender chicken smothered in a rich, creamy sauce served over fluffy rice.

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cubed
  • 1 tbsp olive oil or butter
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Salt & pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • 2 cups cooked white rice (for serving)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chicken and season with salt, pepper, and paprika. Sear until golden and cooked through.
  2. In the same skillet, add onion and garlic. Cook until softened and fragrant.
  3. Pour in chicken broth and let simmer for 2 minutes. Stir in heavy cream, Italian seasoning, red pepper flakes, and Parmesan. Simmer until thickened.
  4. Add the cooked chicken back into the skillet and stir to coat in sauce. Let simmer 3–5 minutes.
  5. Spoon over hot rice, top with parsley, and a pinch more Parmesan if desired.

Notes

  • For added heat, include more red pepper flakes.
  • Feel free to substitute chicken thighs for breasts for a juicier option.
  • This dish can be made ahead and reheated for a quick meal.
