A hearty and delicious creamy chicken Alfredo stuffed eggplant recipe that combines tender eggplant with a rich chicken Alfredo filling and melted cheese.

Ingredients

  • 2 medium eggplants, halved lengthwise
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 cups cooked chicken breast, shredded
  • 1 cup ricotta cheese
  • 1½ cups Alfredo sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ¼ tsp crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a large baking dish.
  2. Score the flesh of each eggplant half, brush with olive oil, and season with salt and pepper. Roast for 25–30 minutes until tender.
  3. Carefully scoop out a little of the eggplant flesh, leaving a sturdy shell.
  4. In a bowl, combine the shredded chicken, ricotta, garlic, Italian seasoning, onion powder, half of the mozzarella, half of the Parmesan, and 1 cup of the Alfredo sauce. Mix until creamy.
  5. Fill each roasted eggplant half generously with the chicken mixture.
  6. Spoon the remaining Alfredo sauce over the tops and around the eggplants.
  7. Sprinkle with the remaining mozzarella and Parmesan cheese.
  8. Bake for 18–20 minutes, or until the cheese is melted, bubbling, and deeply golden.
  9. Broil for 2–3 minutes for an extra crispy cheese crust, if desired.
  10. Garnish with chopped parsley and serve hot with garlic bread or a fresh Caesar salad.

Notes

  • Feel free to adjust the spice level by adding more or less crushed red pepper flakes.
  • For a lower-carb option, you can use zucchini instead of eggplant.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
