  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup fresh or frozen cranberries
  • 2/3 cup heavy cream (plus extra for brushing)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • For the glaze: 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, sugar, baking powder, and salt. Cut in butter using fingers or pastry cutter until mixture is crumbly.
  3. Gently fold in cranberries.
  4. In another bowl, whisk cream, egg, and vanilla. Pour into dry ingredients and mix until dough just comes together.
  5. Turn onto floured surface, shape into a circle about 1-inch thick. Slice into 8 wedges and place on baking sheet.
  6. Brush tops with cream. Bake 18–22 minutes or until golden brown. Let cool slightly.
  7. Mix glaze ingredients and drizzle over warm scones.
