Cranberry pecan chicken is the perfect festive dish that combines sweet and savory flavors, beautifully caramelized.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 cup fresh or frozen cranberries
  • 1/3 cup honey
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup chicken broth
  • 1/2 cup pecans
  • 1/3 cup crumbled feta or goat cheese
  • Fresh rosemary sprigs (for garnish)
  • Fresh chopped parsley (optional)

Instructions

  1. Preheat oven to 200°C (400°F). Season chicken with salt, pepper, paprika, and thyme.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.
  3. In a bowl, whisk honey, balsamic vinegar, garlic, Dijon, and chicken broth.
  4. Add cranberries around the chicken and pour glaze over everything.
  5. Transfer skillet to oven and bake 15–20 minutes until chicken is cooked through and glaze thickens.
  6. Toast pecans in a dry pan for 2–3 minutes until fragrant.
  7. Remove chicken from oven. Spoon glaze over top, sprinkle with toasted pecans and crumbled cheese.
  8. Garnish with fresh rosemary and parsley before serving.

Notes

  • Let chicken rest 5 minutes before serving
  • If glaze is thin, simmer on stovetop 2–3 extra minutes
  • Swap honey for maple syrup for deeper flavor
  • Add orange zest for a citrus twist
