- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 1 cup fresh or frozen cranberries
- 1/3 cup honey
- 1/4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1/2 cup chicken broth
- 1/2 cup pecans
- 1/3 cup crumbled feta or goat cheese
- Fresh rosemary sprigs (for garnish)
- Fresh chopped parsley (optional)
- Preheat oven to 200°C (400°F). Season chicken with salt, pepper, paprika, and thyme.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.
- In a bowl, whisk honey, balsamic vinegar, garlic, Dijon, and chicken broth.
- Add cranberries around the chicken and pour glaze over everything.
- Transfer skillet to oven and bake 15–20 minutes until chicken is cooked through and glaze thickens.
- Toast pecans in a dry pan for 2–3 minutes until fragrant.
- Remove chicken from oven. Spoon glaze over top, sprinkle with toasted pecans and crumbled cheese.
- Garnish with fresh rosemary and parsley before serving.
Notes
- Let chicken rest 5 minutes before serving
- If glaze is thin, simmer on stovetop 2–3 extra minutes
- Swap honey for maple syrup for deeper flavor
- Add orange zest for a citrus twist
