1 ½ cups all-purpose flour
2 tbsp sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 large egg
1 ¼ cups buttermilk
2 tbsp melted butter
1 tsp vanilla extract
1 tbsp fresh orange zest
¾ cup fresh or dried cranberries
Butter or oil for the pan
Maple syrup for serving
Powdered sugar for garnish
Instructions
Mix the Dry Base: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Prepare the Wet Ingredients: In another bowl, whisk egg, buttermilk, melted butter, vanilla, and orange zest until smooth.
Combine & Fold: Pour the wet mixture into the dry ingredients and gently mix until just combined. Fold in cranberries.
Cook the Pancakes: Heat a lightly buttered skillet over medium heat. Pour ¼ cup batter per pancake and cook until bubbles form, then flip and cook until golden.
Stack & Serve: Stack the pancakes high, top with extra cranberries, powdered sugar, and warm maple syrup.
Notes
Use fresh cranberries for a tart burst of flavor.
Adjust sweetness by adding more or less sugar.
Keep pancakes warm in a low oven while cooking the rest.
