Fluffy Cranberry Orange Pancakes are a perfect cozy brunch treat with a balance of sweet and tart flavors.

Ingredients

  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • 1 ¼ cups buttermilk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 tbsp fresh orange zest
  • ¾ cup fresh or dried cranberries
  • Butter or oil for the pan
  • Maple syrup for serving
  • Powdered sugar for garnish

Instructions

  1. Mix the Dry Base: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Prepare the Wet Ingredients: In another bowl, whisk egg, buttermilk, melted butter, vanilla, and orange zest until smooth.
  3. Combine & Fold: Pour the wet mixture into the dry ingredients and gently mix until just combined. Fold in cranberries.
  4. Cook the Pancakes: Heat a lightly buttered skillet over medium heat. Pour ¼ cup batter per pancake and cook until bubbles form, then flip and cook until golden.
  5. Stack & Serve: Stack the pancakes high, top with extra cranberries, powdered sugar, and warm maple syrup.

Notes

  • Use fresh cranberries for a tart burst of flavor.
  • Adjust sweetness by adding more or less sugar.
  • Keep pancakes warm in a low oven while cooking the rest.
