- 1 cup granulated sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup butter (melted & slightly cooled)
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 large orange
- 1/4 cup orange juice (fresh squeezed preferred)
- 1 ½ cups fresh or frozen cranberries (do not thaw if frozen)
- 1/2 cup chopped pecans (optional)
- Coarse sugar for topping (optional)
- Mix the dry ingredients in a large bowl.
- Blend the wet ingredients in another bowl until smooth.
- Combine wet and dry ingredients, then fold in cranberries and pecans.
- Spoon batter into muffin tins and sprinkle with coarse sugar.
- Bake at 375°F (190°C) for 18–22 minutes until golden.
Notes
- Use fresh orange juice for the best flavor.
- Frozen cranberries work well—no need to thaw.
- Optional pecans add a nice crunch.
