Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter (melted & slightly cooled)
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large orange
  • 1/4 cup orange juice (fresh squeezed preferred)
  • 1 ½ cups fresh or frozen cranberries (do not thaw if frozen)
  • 1/2 cup chopped pecans (optional)
  • Coarse sugar for topping (optional)

Instructions

  1. Mix the dry ingredients in a large bowl.
  2. Blend the wet ingredients in another bowl until smooth.
  3. Combine wet and dry ingredients, then fold in cranberries and pecans.
  4. Spoon batter into muffin tins and sprinkle with coarse sugar.
  5. Bake at 375°F (190°C) for 18–22 minutes until golden.

Notes

  • Use fresh orange juice for the best flavor.
  • Frozen cranberries work well—no need to thaw.
  • Optional pecans add a nice crunch.
