- 1 package mini phyllo tart shells (about 15 count)
- 1/2 cup fresh or dried cranberries (chopped if whole)
- 1 small jalapeño, finely diced
- 1/4 cup diced yellow bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- 1 tsp honey or agave syrup
- 2 tbsp crumbled feta cheese
- Salt to taste
- In a bowl, toss together cranberries, jalapeño, all three bell peppers, cilantro, lime juice, honey, and a pinch of salt.
- Let the mix sit for 10–15 minutes so the flavors blend.
- Spoon the mixture into each mini phyllo shell.
- Sprinkle feta crumbles on each tartlet.
- Arrange on a platter and serve chilled or at room temperature.
