1¼ cups all-purpose flour
⅓ cup powdered sugar
½ cup unsalted butter, cold and cubed
1–2 tbsp cold water
1 cup cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
¼ cup heavy cream
1 cup fresh or frozen cranberries
⅓ cup sugar
¼ cup water
1 tsp lemon juice
Instructions
Make the shortbread crust: Mix flour and powdered sugar in a bowl. Cut in cold butter until the mixture looks crumbly. Add cold water just until dough comes together. Press into mini tart pans and chill for 30 minutes.
Bake the crusts: Preheat oven to 350°F (175°C). Bake crusts for 15–18 minutes until lightly golden. Cool completely.
Make the cream filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately to soft peaks. Fold whipped cream into the cream cheese mixture. Fill each tart shell.
Make the cranberry topping: Simmer cranberries, sugar, water, and lemon juice for 10 minutes until thick, glossy, and jam-like. Cool slightly and spoon over the cream layer.
Serve: Garnish with fresh mint or edible decorations. Chill until ready to serve.
Notes
Add sugared cranberries on top for sparkle.
Serve chilled for the creamiest texture.
Add a drizzle of white chocolate for extra glamour.
Keep butter cold for the flakiest crust.
