Ingredients

Scale
  • 410g all-purpose flour
  • 170g granulated sugar
  • 2 ¼ tsp instant yeast
  • ½ tsp salt
  • 180ml warm milk
  • 60g unsalted butter, softened
  • 2 large eggs
  • 110g light brown sugar, packed
  • 2 tbsp ground cinnamon
  • 60g unsalted butter, softened (for filling)
  • 120g powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract
  • Fresh cranberries + powdered sugar for garnish

Instructions

  1. In a mixing bowl, combine flour, sugar, yeast, and salt. Add warm milk, butter, and eggs. Knead until smooth and elastic. Let rise for 1 hour.
  2. Mix brown sugar and cinnamon. Roll dough into a rectangle, spread with butter, and sprinkle cinnamon sugar evenly.
  3. Roll tightly into a log and slice into 10–12 rolls. Arrange in a circle on parchment paper, forming a wreath shape. Let rise for 30–40 minutes.
  4. Bake at 175°C (350°F) for 25–30 minutes until golden. Cool slightly.
  5. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the wreath. Add fresh cranberries and dust with powdered sugar for a snowy finish.

Notes

  • Use room-temperature eggs for soft dough
  • Don’t overbake to keep the rolls tender
  • Glaze while warm for that glossy finish
