1 cup unsalted butter, softened
1 1/4 cups brown sugar, packed
3 large eggs
1 tsp vanilla extract
1/2 tsp ground ginger
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour
1/2 cup dried cranberries
1/2 cup white chocolate chips
8 oz cream cheese, softened
1 cup powdered sugar
1/2 tsp vanilla extract
1/4 cup dried cranberries, chopped
1/4 cup white chocolate, melted (for drizzling – optional)
Instructions
Make the Bar Base: Cream together butter and brown sugar until fluffy, then beat in eggs, vanilla, ginger, baking powder, and salt. Stir in flour, cranberries, and white chocolate chips.
Bake to Perfection: Spread the batter into a greased 9×13 baking dish and bake at 350°F (175°C) for 22–25 minutes.
Whip the Frosting: Beat cream cheese, powdered sugar, and vanilla until smooth.
Frost and Sprinkle: Once the bars have cooled completely, spread the frosting evenly. Sprinkle chopped cranberries across the top. Add a drizzle of melted white chocolate if desired.
Chill & Slice: Chill for at least 1 hour before slicing into triangles or squares.
