  • 6 oz smoked sausage, sliced
  • ½ cup diced onion
  • 3 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 (15 oz) can tomato sauce
  • 2 cups beef broth
  • 8 oz dry spaghetti
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons chopped fresh chives or parsley (optional)
  • Salt & pepper to taste
  • Optional: red pepper flakes for extra kick

Instructions

  1. Brown the ground beef and sausage in a large pot over medium heat.
  2. Add onions and garlic, cooking until fragrant.
  3. Stir in diced tomatoes, tomato sauce, and beef broth.
  4. Break spaghetti in half and add to the pot. Simmer until pasta is tender.
