A hearty southern classic casserole with ground beef, cornbread, and Tex-Mex flavors, perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 box Jiffy cornbread mix
  • 1 egg
  • ⅓ cup milk
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced tomatoes, green onions, jalapeños, sour cream

Instructions

  1. Cook ground beef until browned. Drain fat, then stir in taco seasoning, beans, corn, and diced tomatoes. Simmer for 5 minutes.
  2. Mix cornbread mix with egg and milk until just combined.
  3. Spread beef mixture into a greased 9×13″ baking dish. Pour cornbread batter over the top and spread evenly.
  4. Bake at 375°F for 25–30 minutes until cornbread is golden. Top with cheese and broil for 2–3 minutes.
  5. Let rest 5 minutes before serving. Garnish with optional toppings.

Notes

  • Use any boxed cornbread mix if Jiffy is unavailable.
  • Adjust toppings based on preference.
  • Great for potlucks or family dinners.
