- 1 lb sirloin steak, cut into bite-sized chunks
- 1 package (9 oz) cheese tortellini, cooked and drained
- 5 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp red pepper flakes
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- Salt & pepper, to taste
- 1 tbsp olive oil (for searing)
- Optional: grated Parmesan for garnish
- Heat olive oil in a hot skillet and sear steak bites for 2–3 minutes per side until caramelized and juicy.
- In the same pan, reduce heat and add butter, garlic, red pepper flakes, Dijon mustard, lemon juice, and a pinch of salt. Stir until combined.
- Add the cooked tortellini to the skillet and toss to coat in the cowboy butter sauce.
- Add steak bites back to the pan and toss everything together until warmed through.
- Sprinkle with fresh parsley (and Parmesan if desired). Serve hot.
