Sweet, chewy coconut cookies with a festive cherry drizzle, perfect for holidays or cookie exchanges.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup mini chocolate chips
  • 1/2 cup powdered sugar
  • 23 tsp maraschino cherry juice
  • Pink sanding sugar

Instructions

  1. Cream butter and sugars until fluffy. Beat in egg, vanilla, and almond extract.
  2. Stir in flour, baking soda, and salt. Fold in coconut and chocolate chips.
  3. Scoop 1-inch dough balls onto a baking sheet. Bake at 350°F for 9–11 minutes.
  4. Let cookies cool. Whisk powdered sugar with cherry juice and drizzle over cookies.
  5. Sprinkle with pink sanding sugar while drizzle is wet.

Notes

  • Almond extract adds extra flavor but is optional.
  • Cherry juice can be substituted with milk and food coloring.
  • Store in an airtight container for freshness.
