A warm, cozy, creamy, and irresistibly comforting classic tomato soup paired with grilled cheese that warms your soul!

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar (optional)
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/2 cup heavy cream
  • Fresh basil leaves (for garnish)
  • 4 slices sourdough or white bread
  • 2 tablespoons softened butter
  • 4 slices cheddar cheese
  • 2 slices mozzarella (for extra melt)

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onion until soft, about 4–5 minutes. Add garlic and cook for 30 seconds.
  2. Stir in tomato paste and cook for 1 minute to deepen flavor.
  3. Add crushed tomatoes, broth, sugar, basil, salt, and pepper. Simmer for 15–20 minutes.
  4. Blend until smooth using an immersion blender. Stir in heavy cream and simmer for 2–3 more minutes.
  5. Butter one side of each bread slice. Place cheese between unbuttered sides.
  6. Cook sandwiches in a skillet over medium heat, 3–4 minutes per side, until golden brown and cheese is melted.
  7. Slice and serve alongside hot soup. Garnish soup with cream swirl and fresh basil.
