  • 1 small onion
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Oil for frying (vegetable or canola)
  • Sour cream (for serving)
  • Chopped chives (for serving)
  • Applesauce or ketchup (optional for serving)

Instructions

  1. Grate potatoes and onion using a box grater or food processor.
  2. Place grated mixture in a clean towel and squeeze out as much liquid as possible. (This ensures crispy edges.)
  3. Transfer to a bowl and mix with eggs, flour, salt, pepper, and garlic powder.
  4. Heat about 1/4 inch oil in a skillet over medium-high heat.
  5. Scoop 1/4 cup mixture per latke into hot oil and flatten slightly.
  6. Fry 3–4 minutes per side until deeply golden and crisp.
  7. Transfer to paper towels to drain. Sprinkle lightly with salt while hot.
