Base Layer:
1½ cups graham cracker crumbs
¼ cup soft brown sugar
½ tsp ground cinnamon
6 tbsp melted unsalted butter
Creamy Filling:
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 tsp vanilla extract
Cinnamon Ribbon:
½ cup packed brown sugar
1½ tbsp ground cinnamon
2 tbsp all-purpose flour
5 tbsp melted butter
Instructions
Preheat oven to 325°F (163°C). Combine graham crumbs, brown sugar, and cinnamon. Stir in melted butter and press firmly into a 9-inch springform pan. Bake for 10 minutes. Cool.
Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in sour cream and vanilla. Set aside.
Mix brown sugar, cinnamon, and flour. Stir in melted butter until it forms a cinnamon paste.
Pour half the filling over crust. Drop spoonfuls of cinnamon mix. Repeat with remaining batter and swirl gently with a knife.
Place the pan in a larger tray and pour in hot water halfway up. Bake for 55–65 minutes. Turn off oven, crack door, and let cheesecake cool for 1 hour. Then refrigerate for at least 4 hours or overnight.
Slice and serve with powdered sugar or a vanilla icing drizzle.
Notes
Use room temp ingredients for a smooth mix.
Don’t overmix once eggs are added.
Add a maple glaze for extra indulgence.
