3 ripe bananas, mashed
⅓ cup melted butter
¾ cup granulated sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 ½ cups all-purpose flour
⅓ cup brown sugar (for swirl)
1 tsp ground cinnamon (for swirl)
½ cup powdered sugar (optional glaze)
1–2 tbsp milk or cream (optional glaze)
Splash of vanilla extract (optional glaze)
Instructions
Mash bananas until smooth in a large bowl. Stir in melted butter.
Mix in sugar, egg, and vanilla extract.
Add baking soda, salt, and flour, mixing just until combined.
In a greased loaf pan, pour in half the batter, sprinkle half the cinnamon sugar mix, and swirl with a knife. Repeat.
Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick comes out clean. Cool and drizzle with glaze if desired.
Notes
Ensure bananas are very ripe for the best flavor.
Adjust the amount of cinnamon in the swirl mixture to taste.
Store leftovers in an airtight container for up to 3 days.
