Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 ½ cups pumpkin puree
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar (for topping)
  • ½ tsp cinnamon (for topping)

Instructions

  1. In a bowl, whisk flour, baking soda, salt, and spices together.
  2. In another bowl, combine sugars, eggs, pumpkin, oil, milk, and vanilla.
  3. Add the dry ingredients to the wet and stir until just combined.
  4. Pour the batter into a greased 9×5 loaf pan and sprinkle the cinnamon sugar topping over it.
  5. Bake at 350°F for 55–65 minutes until a toothpick comes out clean. Let cool before slicing.

Notes

  • Ensure the pumpkin puree is not sweetened.
  • Store leftovers in an airtight container for up to 3 days.
  • This bread can be frozen for up to 3 months.
